Just because your pattern doesn't ask for a beautiful trim, doesn't mean that you can't go ahead and add it yourself.  Whether it's for children or because you want to add a delicate detail to your collars, adding a lace trim can add something special to your garments.  This demonstration shows you two different techniques to accomplish adding trim to the edge of your collars.  The first way incorporates the trim into the seam of the collar so it requires some prep.  The second way works if you suddenly decide that a lace trim is definitely needed but already started sewing your collar pieces together.  They both have a different look so you can really go by with the look that really appeals to you.
